Sunday Sheet Pan Dinner

The easiest kind of comfort food — everything cooks together while you relax.

Some recipes ask for your full attention. This one doesn’t.
Just toss chicken, potatoes, and carrots on a sheet pan, drizzle with olive oil, sprinkle salt and pepper, and let your oven do the rest.

While it bakes, your kitchen fills with that cozy Sunday smell — the kind that makes everyone wander in asking, “What’s for dinner?”

🛒 You’ll Need

  • 2–3 chicken breasts or thighs

  • 3–4 small potatoes, chopped

  • 3 carrots, sliced

  • Olive oil

  • Salt & pepper

  • Optional: garlic, rosemary, or any herbs you like

👩‍🍳 How to Make It

  1. Preheat oven to 400°F (200°C).

  2. Line a sheet pan with parchment paper.

  3. Spread out the chicken, potatoes, and carrots.

  4. Drizzle with olive oil, sprinkle salt and pepper (and herbs if you want).

  5. Bake for 40–45 minutes, until everything’s golden and a little crispy.

That’s it. No stirring, no sauce-making, no stress.
